Five-Ingredient Cereal Bars

1 c.

old fashioned rolled oats

1/2 c.


1/2 c.

smooth peanut butter (or any nut or seed butter)

1 tbsp.

coconut oil

3 1/2 c.

cereal of choice (we used a mix of O’s, Kix, and Ancient grain flakes)

  1. Heat oven to 350°F. Line a 9-by-9-inch baking pan with parchment, leaving an overhang on two sides. Scatter oats on a rimmed baking sheet and bake until toasty, 10 to 15 minutes. 
  2. Place honey, nut butter, and coconut oil in a pot over low heat and stir until throughly combined and warmed through, about 2 minutes.
  3. Place the cereal and oats in a large bowl and stir to combine.
  4. Pour the warm peanut butter mixture over the cereal and stir to coat the dry ingredients thoroughly. 
  5. Place the mixture into the parchment-lined 9-by-9-inch baking pan, gently pressing down to even it.
  6. Freeze the mixture for at least 45 minutes.
  7. Remove the bars from the pan, transfer to a cutting board and, using a serrated knife, cut into bars.
