Ingredients
1/2 lb.

nectarines or peaches, pitted, cut into 6 pieces

1/2 lb.

orange or red heirloom tomatoes (about 3), each cut into 6 pieces

1/2

small red chile, seeded and

quartered

1

scallion, chopped

1/2 c.

cilantro

2 tbsp.

olive oil, plus more for serving

2 tsp.

sherry vinegar 

Kosher salt and pepper

Directions
  1. In a blender, finely chop nectarines, tomatoes, cucumber, red chile, scallion, cilantro, oil, vinegar, and 1/2 tsp each salt and pepper. To serve, spoon relish over cooked white fish, chicken, or steak, or toss with salad greens.
